This oven series utilizes axial fans combined with an automatic climate control system and a computer-controlled backup system for optimal operation. With a thermal efficiency of approximately 70%, the oven uses steam or electric heating alongside axial fans to transfer heat via convection. Heated air flows smoothly over the baking trays and materials, ensuring effective heat transfer. Fresh air is continuously introduced while exhaust air is removed, maintaining ideal relative humidity inside the oven. A key characteristic is the internal circulation of hot air within a closed loop, which enhances heat retention and conserves energy.
